To equip food handlers of both retail and non-retail food establishments with the knowledge and skills to follow food safety and hygiene policies and procedures as well as inculcate the rationale of some of the practices into food handlers for better understanding and assisted policing in the licensed food premises.
After attending the course, learners will be able to:
- Identify physical and chemical sourcesof food contamination, as well asnaturally occurring toxins
- Understandmicroorganisms associated with foodborne illness and theirconditions for growth
- Practise good personal hygiene by performing good personal hygiene and Personal Protective Equipment (PPEs)
- Perform best practices when receiving,storing, checking, and preparing ingredients
- Handle food safely by recognising best practicesin defrosting, preparing and transporting food safely
- Maintain cleanliness of equipment and premises,manage waste properly, and conductfood safety and hygiene checks
- Be able to speak, listen and read basic Chinese
