Course Information

The Intermediate Pastry Preparation course is a comprehensive 32-hour program designed for pastry enthusiasts and aspiring chefs who want to deepen their understanding and skills in creating a variety of baked goods and desserts. This hands-on course will teach you the principles of baking, the techniques to prepare advanced pastries, and how to assemble and decorate desserts like a professional.

This module is designed to equip learners with the skills and knowledge to use suitable techniques to prepare ice creams,meringues, entremets, recognize the impactsof temperature on flavour of hot and colddesserts, and determine how the laminated dough process works and laminate and rest doughs

After attending the course, learners will be able to:

  • Utilize the principles of baking to bake
  • Imitate the recipes and methods of baking
  • Explain impacts of temperature on flavour of hot and colddesserts
  • Prepare and assemble components
  • Determine types and methods assembling,finishing, and decorating
  • Apply finishing touches and decorations for plating and presentation
  • At least 21 years old;
  • At least secondary school education;
  • Able to speak, listen and read English at a proficiency level not lower than the Employ ability Skills Workforce Skills Qualification Workplace Literacy Level (WPL Level 5)
